You will reach a much wider audience this way and get in at the beginning as there are not a lot of raw food related books on Kindle yet (I should know, I've been looking). To give you an idea of how big the Kindle platform is, it's Amazon's number 1 selling item of all time, outselling all the Harry Potter books! Amazon won't take a huge chunk of your profit away although I think you'd need to drop the price to make it worth your while. I will by your book after payday, looks very interesting :) You can bypass the traditional publisher and self publish on Amazon Kindle.
